Blanc de Blanc (pron. blonk-de-blonk)
Blanc de Blanc means white wine made from only white grapes, in a very specialized manner. This wine is pressed and the juice carefully settled, racked and fermented cold and slow. A few months later, raw wines are racked off yeast lees, and blended cold, stabilized and polish filtered. They are then triaged and left on yeast lees for between two and a half and three and a half years prior to disgorgement.
A Chardonnay Blanc de Blanc sparkling wine is light and refreshing and has the palest straw colour with a fine persistent bead and is all about shape and texture. It has lovely aromas of lemons and ripe apples. It shows fresh fruit with a wisp of baked bread with a silky soft mouth feel. The palate would usually be long and lean with great flavour persistence.
