Sparkling Shiraz, or as sparkling red wines used to be known in Australia - Sparkling Burgundies, may not be cool but are gaining in popularity and have a long tradition in Australia.

Powerful fruit, dry yet seeming sweet, some acid and tannin on the finish, it’s heavy in flavor yet lightened by a profusion of fine bubbles. Fantastic!
